BANANA CHOCOLATE CAKE

You have ripe bananas on the counter. What to do? Banana bread is the first thing that comes to the mind. But, if you want something more indulgent and delectable, this banana and chocolate cake is the way to go. Chocolate makes everything better. It takes this simple banana bread and turns it into an enticing dessert that people will ask for more. It is also a perfect cake for a family gathering as it serves up to 14 people.
Not only is it heavenly, but it is also quick to put together. You do not need a mixer, just a hand whisk and fifteen minutes of your time. You mix all your dry ingredients in one bowl and the wet ingredients in another and then add the wet into the dry and mix well and bake. That is it! This is a fairly thin batter. Since we use oil as the fat, the cake is moist in texture.
Also, what cake is complete without frosting? I have used this Chocolate Buttercream here but you can also use chocolate ganache.

Ingredients:

Dry Ingredients:

  • All Purpose Flour - 1 and 3/4 cup sifted
  • Unsweetened Cocoa Powder - 3/4 cup sifted
  • Caster Sugar - 1 and 1/2 cup
  • Baking Powder - 1 and 1/2 tsp
  • Baking Soda - 1 and 1/2 tsp
  • Salt - 1/2 tsp

Wet Ingredients:

  • Eggs - 2 
  • Ripe Medium Sized Bananas - 2 mashed
  • Milk - 1/2 cup at room temperature
  • Water - 1 cup warm
  • Instant Coffee Powder - 1 tsp
  • Vegetable Oil - 1/2 cup
  • Vanilla Extract - 1 and 1/2 tsp 

Instructions:

  1. Add all the dry ingredients in a large bowl and whisk till combined.
  2. In a separate bowl, add the eggs and whisk.
  3. Mash the bananas in a different bowl using a fork or a masher and add it to the whisked eggs.
  4. Next, add milk which is at room temperature.
  5. Prepare your coffee by adding the instant coffee powder to warm water and stir it well. Add this to the egg+banana+milk bowl.
  6. Next, add vegetable oil (can be replaced with canola oil) and vanilla extract and whisk well.
  7. Add the whisked wet ingredients to the dry ingredients and mix until combined using a spatula. This is a thin batter. 
  8. Pour the batter into a prepared pan and bake for about 30-35 minutes in a 180 degree Celsius preheated oven or until a toothpick inserted in the centre comes out clean.
  9. This batter yields four 8 inch cakes.
  10. Let the cake cool in the pan for five minutes before transferring onto a cooling rack. Allow the cake to cool completely before frosting. It tastes better with a Chocolate Buttercream frosting or a chocolate ganache.

BAKED MULTIGRAIN CRACKERS

We all get that hunger pangs between meals right? I used to resort to cakes or chips or some fried food item to momentarily satisfy my hunger. Now, I know I can’t do anything about cakes because- cake duh! But I decided I can change my craving for fried foods to healthy alternatives. This is where these baked crackers come. BANANA PROTEIN "COOKIES"

Because it is already sweet, bananas are my go to fruit in baking. Using overripe bananas results in little to no amount of sugar to be added. Lately, this has kind of been a priority for me as I am trying to reduce our intake of sugar but unwilling to forget sweet treats. Also, bananas replace butter in this recipe. One step towards eating healthy! The texture of these "cookies" is not chewy like your traditional cookies but more on the side of muffins. I wanted something smaller than muffins for a quick bite and hence these cookies.
