BAKED MULTIGRAIN CRACKERS

We all get that hunger pangs between meals right? I used to resort to cakes or chips or some fried food item to momentarily satisfy my hunger. Now, I know I can’t do anything about cakes because- cake duh! But I decided I can change my craving for fried foods to healthy alternatives. This is where these baked crackers come.

I went a step further and made the crackers without all purpose flour. How great is that? Not only are these healthy but they are also tasty and easy to make. This is what I call a winner.

All you have to do is take different flours, add whatever seasonings you want, make a dough, rest, shape and bake. That easy! And if you don’t have all the flours, no worries. You can replace that for which ever flour you have at home.

Ingredients:

  • Rice flour - 1/2 cup
  • Whole wheat - 1/4 cup
  • Semolina - 1/4 cup
  • Maize flour - 1/4 cup
  • Chickpeas flour/Besan - 1/4 cup
  • Oats - 3 Tbsp
  • Salt - As per taste
  • Pepper - 1 tsp
  • Chilli powder - 1 tsp
  • Asafoetida - a pinch (optional)
  • Crushed roasted groundnuts - 2 Tbsp
  • Sesame seeds - 1 tsp and extra for top of the cracker
  • Water - As needed.

Method:

  •      In a large bowl add all the flours, oats and semolina.
  •      To it, add all the seasonings and mix well.
  •     Add small quantities of water and mix well until a hard dough is formed. Cover and rest for 20-30 minutes.
  •       Then, roll out the dough on a greased surface and cut desired shapes. Prick the dough with a fork so it doesn't puff up while baking. I added sesame seeds on top before baking.
  •      Bake for 15-18 minutes at 200 degrees Celsius. Let it cool for few minutes and then your crispy cracker is ready.

BANANA AND OATS PROTEIN BREAD

While there are many versions of banana bread, this probably has to be my favourite one. It has less calories compared to the regular banana bread, no added sugar and uses oat flour and protein powder. So it doubles up as a healthy snack and a dessert too 😋 I have tried this recipe four times and it is a success every time. I have used Optimum Nutrition 100% Whey Gold Standard protein in the flavour Chocolate Mint. You can use any protein supplement of your choice. If you have a sweet tooth and the sweetness from the bananas and protein supplement isn't enough, then you can add 2 tablespoons of sweetener of your choice. I have also used unsweetened applesauce here. If you prefer not to use it or it is unavailable, you can substitute with 1/4th cup of oil instead. This does not change the taste or texture of the final product. I have adapted this recipe from The Protein Chef  with a little minor changes here and there. He has already perfected the recipe. I have only changed ...

BANANA PROTEIN "COOKIES"

Because it is already sweet, bananas are my go to fruit in baking. Using overripe bananas results in little to no amount of sugar to be added. Lately, this has kind of been a priority for me as I am trying to reduce our intake of sugar but unwilling to forget sweet treats. Also, bananas replace butter in this recipe. One step towards eating healthy! The texture of these "cookies" is not chewy like your traditional cookies but more on the side of muffins. I wanted something smaller than muffins for a quick bite and hence these cookies. It is quite easy to whip up a batch but you need a little patience as the batter is thin and needs to rest in the refrigerator for a bit. Healthy snack/dessert does not have to be expensive. The protein in these banana protein cookies does not come from additional protein powder. Instead, it uses peanut butter and oats to provide protein. I also love how this recipe entirely replaces all purpose flour with oat flour. Bananas and oat f...
