BANANA CHOCOLATE CAKE

You have ripe bananas on the counter. What to do? Banana bread is the first thing that comes to the mind. But, if you want something more indulgent and delectable, this banana and chocolate cake is the way to go. Chocolate makes everything better. It takes this simple banana bread and turns it into an enticing dessert that people will ask for more. It is also a perfect cake for a family gathering as it serves up to 14 people. Not only is it heavenly, but it is also quick to put together. You do not need a mixer, just a hand whisk and fifteen minutes of your time. You mix all your dry ingredients in one bowl and the wet ingredients in another and then add the wet into the dry and mix well and bake. That is it! This is a fairly thin batter. CHOCOLATE BUTTERCREAM FROSTING

Ingredients: Unsalted Butter - 1 cup Icing Sugar/Powdered Sugar - 3 and 1/2 cups sifted Unsweetened Cocoa Powder - 1/2 cup sifted Milk - 3 Tablespoons Vanilla Extract - 1 and 1/2 tsp Salt - a pinch Instructions: Using a hand mixer or a stand mixer, beat the butter on high speed for 2-3 minutes until butter is light and fluffy. Scrape the sides and continue. Next, add the sugar one cup at a time. Initially beat on low speed and then continue mixing on high speed. Add cocoa powder, milk, vanilla extract and salt. Mix the frosting on high speed for another 2 minutes. And done! Check the consistency of the buttercream. If it is too runny add more sugar, and if the frosting is too thick, add a teaspoon of milk at a time if required.
